Coffee Overnight Oats

Coffee Overnight oats recipe
6 min total 6g protein 130 kcal

Coffee overnight oats is a make-ahead breakfast for coffee lovers. Oats and chia soak overnight in real coffee flavour with honey and a little cinnamon, and we finish with creamy curd. It is like a café breakfast with a soft, pudding-like texture, ready to grab on busy mornings.

Why you'll love this recipe:

  • Coffee and breakfast in one jar
  • Make-ahead — soaks overnight
  • Fibre and protein from oats, chia and curd
  • Creamy, lightly sweet and truly filling

What you get in every serving

For anyone who cannot start the day without coffee, this is breakfast and coffee in one jar — about 130 calories, nearly 6g of protein and close to 3g of fibre per serving. The oats and chia give steady energy and the curd adds protein, so unlike a coffee on an empty stomach, this one really keeps you going. It has become my favourite work-from-home breakfast on early mornings.

How I make it nicely

Mix the instant coffee fully in a little hot water first so the flavour is even and there are no bitter bits. Mix it into the oats and chia with the honey and cinnamon, soak overnight, then add curd in the morning and a little coffee powder on top. If you like it warm, one minute in the microwave makes it lovely and cosy.

Make it your own

Use milk instead of water for a creamier jar, and add more or less coffee as you like. A spoon of cocoa makes it a mocha version, and a few banana slices or chopped dates add natural sweetness. Keep it vegan with plant curd and maple syrup — it works just as well.

Instructions

  1. In a small cup, dissolve the instant coffee in hot water and stir well.

  2. In a bowl or jar, combine the oats, chia seeds and the coffee mixture, and stir.

  3. Stir in the honey and cinnamon.

  4. Cover and refrigerate overnight (at least 6 hours) so the flavours develop.

  5. In the morning, stir in the curd, sprinkle with a little coffee powder and serve. Warm in the microwave for a minute if you prefer it hot.

Mayuri's Tips

  • Adjust the coffee powder to taste — more for a stronger flavour.
  • Use milk instead of water for a creamier texture.
  • Stir well before serving.
