Gluten-Free Apple Peanut Butter “Donuts”
Ingredients:
– 3 medium apples, cored and sliced into 1/4 inch thick rounds
– 1/2 cup chocolate peanut butter
– 1 tablespoons chia seeds
– 1 tablespoons sunflower seeds
– 1 tablespoons pumpkin seeds
Instructions:
- Use a round bottle cap or cookie cutter to cut out a centre “donut” hole in each apple slice. Set apple rings and centres aside separately.
- Spread about 1 tablespoon of chocolate peanut butter on each apple ring, covering one side completely.
- Sprinkle chia seeds, sunflower seeds and pumpkin seeds over the peanut butter, pressing lightly so they adhere.
- Optionally you can also Sandwich apple hole centres between the apple rings with peanut butter and seeds to form layers of “donuts”.
- Serve immediately or refrigerate until ready to enjoy. Best when fresh.
