Gluten-Free Apple Peanut Butter “Donuts”

Ingredients: 

– 3 medium apples, cored and sliced into 1/4 inch thick rounds

– 1/2 cup chocolate peanut butter 

– 1 tablespoons chia seeds

– 1 tablespoons sunflower seeds 

– 1 tablespoons pumpkin seeds

Instructions:

  1. Use a round bottle cap or cookie cutter to cut out a centre “donut” hole in each apple slice. Set apple rings and centres aside separately.
  2. Spread about 1 tablespoon of chocolate peanut butter on each apple ring, covering one side completely. 
  3. Sprinkle chia seeds, sunflower seeds and pumpkin seeds over the peanut butter, pressing lightly so they adhere.
  4. Optionally you can also Sandwich apple hole centres between the apple rings with peanut butter and seeds to form layers of “donuts”. 
  5. Serve immediately or refrigerate until ready to enjoy. Best when fresh.
