Strawberry Mojito

In a mortar and pestle, gently muddle the strawberries, mint leaves, lemon and salt into a chunky pulp. Do not over-mash, so it keeps some texture.

Pour the strawberry-mint pulp into a tall glass and add 4–5 ice cubes.

Top up with chilled sparkling water and stir gently. Add a little sugar syrup if needed to balance the flavours.
