This creamy muskmelon milkshake — our Sharbat-e-Bahaar — is the ultimate refreshing summer drink, blended from sweet ripe muskmelon (cantaloupe), chilled milk and a touch of honey, then served the prettiest way possible: poured straight back into the hollowed-out melon shell. Garnished with chopped pistachios and a few strands of saffron, it is cooling, naturally sweet and ready in minutes.

Why you'll love this recipe:

  • Naturally sweet — just ripe muskmelon and a little honey, no refined sugar
  • Cooling and hydrating for hot Indian summers
  • Ready in about 5 minutes with a blender
  • A showstopper served in the melon shell, garnished with pista and kesar

Instructions

  1. Halve the muskmelon, scoop out the seeds, and carefully scoop out the flesh — keep one clean half of the shell intact to serve in.

  2. Add the muskmelon flesh, chilled milk and honey to a blender.

  3. Blend until smooth and creamy.

  4. Add a few ice cubes and blend briefly, or simply pour the shake over ice.

  5. Pour the milkshake into the hollowed muskmelon shell (or into tall glasses).

  6. Garnish with chopped pistachios and a few saffron strands, and serve chilled with a straw.

Mayuri's Tips

  • Use a fully ripe, fragrant muskmelon for the sweetest flavour and richest colour.
  • Chill the muskmelon and milk beforehand so you need less ice and the shake stays thick.
  • Adjust the honey to taste depending on how sweet the melon is.
  • Soak the saffron strands in a teaspoon of warm milk first for a deeper colour and aroma.
  • For a vegan version, use chilled almond or oat milk and maple syrup instead of honey.
  • Serve immediately — it is best fresh and cold.

Frequently asked questions

Yes. Swap the whole milk for chilled almond, oat or soy milk, and use maple syrup or date syrup in place of honey. It stays just as creamy and refreshing.

No. A ripe muskmelon is naturally sweet, so a little honey is usually enough. Taste the shake and adjust the sweetness before serving.

Halve the muskmelon, scoop out the seeds and flesh, and keep one clean half of the shell. Blend the flesh into the shake, then pour it back into the shell for that signature presentation.

It is best served fresh, but you can blend the shake (without ice) and refrigerate it for a few hours. Stir, add ice and garnish just before serving.
