  1. Heat the ghee in a pan over medium heat.

  2. Add the peanuts and roast until they start to turn golden.

  3. Add the curry leaves and dry coconut slices, and sauté until fragrant and lightly crisp.

  4. Add the makhana and roast, stirring often, until crunchy — about 5–6 minutes.

  5. Sprinkle over the salt and turmeric and toss well to coat evenly.

  6. Roast for another minute, then take off the heat. Cool slightly and serve, or store in an airtight jar.
