Tender coconut water gives natural minerals (electrolytes) and keeps you hydrated, which is why it feels so reviving on a hot day, and the coffee gives a gentle lift without anything heavy. It is light, clean and gives nice energy.
How I make it nicely
Make the coffee strong, because the coconut water and ice will make it lighter — a weak coffee gets lost. I let the coffee cool a little, then pour it over a glass full of fresh coconut water and lots of ice. A small squeeze of lemon at the end lifts it and stops it tasting flat. Stir gently and drink at once while it is cold.
